Provided are: a curdlan-containing composition which hardly forms aggregates when dispersed or dissolved in water and easily enables the preparation of a curdlan dispersion or a curdlan solution； a product such as a food which comprises the curdlan-containing composition； and a method for producing a product such as a food which comprises the curdlan-containing composition. The curdlan-containing composition is characterized by: comprising curdlan and an alkali salt, said curdlan and said alkali salt being granulated； the volume-average grain diameter of the granulated grains being within the range of 90-1000 μm； in the granulated grains, the ratio of grains having a volume-average grain diameter of 50 μm or less to total grains being 10% or below； the content by weight of the alkali salt being 10 or higher, by referring the content by weight of curdlan as to 100； and the pH value of a dispersion or an aqueous solution, which is prepared by dispersing/dissolving the curdlan-containing composition in water, being within the range of 10-13.La présente invention concerne : une composition contenant du curdlan qui ne forme pratiquement pas d'agrégats lorsqu'elle est dispersée ou dissoute dans l'eau et qui permet facilement la préparation d'une dispersion de curdlan ou d'une solution de curdlan ； un produit tel qu'un aliment qui comprend la composition contenant du curdlan ； et un procédé de fabrication d'un produit tel qu'un aliment qui comprend la composition contenant du curdlan.
