A control unit (13) is configured to maintain active the heating means (14) of the combustion type during the activation and following the reaching of a predefined cooking temperature TC by the first and/or the second heating means (7) of the electrical type, so as to ensure the maintenance of a base temperature (TB) inside the cooking chambers of the oven (1) through the heating means (14) of the combustion type and adjust the temperature through the heating means (7) of the electrical type.
