The invention further relates to a method for preparing avocado oil rich in unsaponifiables from whole soft avocados, said unsaponifiables containing aliphatic acetogenins and/or derivatives thereof. The invention further relates to avocado oil which is rich in unsaponifiables and which can be prepared by said method. The invention further relates to the use of the avocado oil for preparing an avocado oil concentrate enriched with unsaponifiables, or avocado unsaponifiables that are rich in aliphatic furans.
