PROBLEM TO BE SOLVED: To provide a production method of a high quality dried persimmon without generation of mold, oxidation browning and dullness in which sulfur fumigation and hot water processing are eliminated.SOLUTION: A production method of a dried persimmon comprises peeling step S1-1 of peeling a raw material persimmon, and drying step S1-3 of making an infra-red ray irradiate a peeled persimmon in an infrared-ray chamber, and performing drying, ageing and astringency removal thereof to obtain the dried persimmon.
