The present invention relates to a maple product comprising isomaltuloseenzymaticallyconverted from a maple starting product and having a low glycaemic index. Thepresentinvention also relates to a maple product comprising isomaltuloseenzymaticallyconverted from a maple starting product comprising sucrose wherein theenzymaticallyconverted isomaltulose corresponds to about 20% to 98% of the sucrose presentin themaple starting product prior to the enzymatic conversion. The presentinvention alsorelates to a process for obtaining an isomaltulose maple product comprisingthe step ofenzymatically converting the sucrose present in a maple starting product intoisomaltulose wherein at least 20% to 98% of the sucrose present in the maplestartingproduct is converted into isomaltulose.
