PROBLEM TO BE SOLVED: To provide an endoscope system and an endoscope image processing method which allow a single operation switch to be assigned with a plurality of functions without sacrificing the operability and also allow an image to be acquired at a timing desired by an operator.SOLUTION: An endoscope system 1 includes: an endoscope 20 which makes observations of a subject and has an operation switch 25a assignable with predetermined functions； a control unit 41 for assigning a first function to the operation switch 25a in a one-push state； and a time sensing unit 41a for measuring switch-pushing time from the one-push state.
