The present invention relates to a method for producing benzopyrene-reduced sliced black ginseng, including: a step of performing primary cutting on raw ginseng into an average length of 5 to 7 cm； a step of maintaining the cut ginseng for 6 to 12 hours in activated carbon water； a step of separating the ginseng by using a filter and then performing primary steaming on the separated ginseng for 30 minutes to one hour at a temperature of 120C； a step of performing primary drying on the ginseng at a temperature of 20 to 25C after the primary steaming, so the moisture content of the ginseng reaches 10 to 15 wt%； a step of performing secondary cutting on the ginseng after the primary drying into an average length of 0.5 to 1 cm； a step of performing secondary steaming on the cut ginseng for one hour to two hours at a temperature of 120C and in a pressure of 1 atm； a step of performing tertiary steaming on the ginseng for one hour to two hours at a temperature of 100C and in a pressure of 2 atm after the secondary steaming； a step of performing secondary drying on the ginseng using cold air after the tertiary steaming so the moisture content of the ginseng reaches 5 to 10 wt%； a step of performing tertiary cutting on the ginseng after the secondary drying into an average length of 1 to 3 mm； and a step of aging the ginseng for two to three days at a temperature of 40 to 50C after the tertiary cutting.본 발명은 원료 삼(蔘)을 5cm 내지 7cm의 평균길이로 1차 절단하는 단계； 절단된 삼을 활성탄이 구비된 물 중에 투입하여 6시간 내지 12시간 동안 유지하는 단계； 필터를 이용하여 삼을 분리한 후, 분리해 낸 삼을 120℃의 온도에서 30분 내지 1시간 동안 1차 증숙하는 단계； 1차 증숙한 삼을 수분함량이 10wt% 내지 15wt%가 되도록 20℃ 내지 25℃의 온도에서 1차 건조하는 단계； 1차 건조한 삼을 0.5cm 내지 1cm의 평균길이로 2차 절단하는 단계； 절단된 삼을 1기압 및 120℃의 온도에서 1시간 내지 2시간 동안 2차 증숙하는 단계； 2차 증숙된 삼을 2기압 및 100℃의 온도에서 1시간 내지 2시간 동안 3차 증숙하는 단계； 3차 증숙된 삼을 수분함량이 5wt% 내지 10wt%가 되도록 냉풍건조하는 2차 건조하는 단계； 2차 건조된 삼을 1mm 내지 3mm의 평균길이로 3차 절단하는 단계； 및 3차 절단된 삼을 40℃ 내지 50℃의 온도에서 2일 내지 3일 동안 숙성시키는 단계；를 포함하는 벤조피렌이 저감된 흑편삼의 제조방법에 대한 것이다.
