A flavour and texture additive material obtainable from a vegetable start material of onion, which comprises water soluble and water insoluble fibres and at least one type of ethereal oil from onion is described. The flavour and texture additive material consists of disintegrated pieces of the vegetable start material, which pieces comprise a vegetable fibre material with natural or created cavities, wherein the ethereal oil is provided inside of the cavities of the fibre material and the content of water insoluble fibre to water soluble fibre is higher in the flavour and texture additive material than in the vegetable start material. A food product comprising the flavour and texture additive material is also described.La présente invention concerne un matériau additif d’arôme et de texture pouvant être obtenu à partir d’un matériau de départ végétal d’oignon, qui comprend des fibres hydrosolubles et insolubles dans l’eau et au moins un type d’huile éthérée d’oignon. Le matériau additif d’arôme et de texture est constitué de morceaux désintégrés du matériau de départ végétal, lesdits morceaux comprenant un matériau de fibres végétales avec des cavités naturelles ou créées, l’huile éthérée étant disposée à l’intérieur des cavités du matériau de fibres et la teneur en fibres insolubles dans l’eau par rapport aux fibres hydrosolubles étant plus élevée dans le matériau additif d’arôme et de texture que dans le matériau de départ végétal. La présente invention concerne en outre un produit alimentaire comprenant le matériau additif d’arôme et de texture.
