Food product comprising flavour encapsulates, the flavour encapsulate comprising, based on the weight of the flavour encapsulate, - from 99 to 50 wt.% of a melt-extruded core and - from 50 to 1 wt.% of a water-insoluble coating around the core, wherein the core comprises, based on the weight of the core: - from 1 wt.% to 60 wt.% of at least one flavour compound, - from 99 wt.% to 40 wt.% of a matrix material, and wherein the water content of the core is lower than 8 wt.%, based on the weight of the core, and wherein the matrix material has a glass transition temperature above 20°C, wherein the majority of the matrix material is hydrophilic, and wherein the water-insoluble coating comprises, based on the weight of the coating, less than 10wt.% of one of the group consisting of fat, wax, and mixtures thereof, and wherein the average particle size of the flavour encapsulate is from 200 to 5000 μm.La présente invention concerne un produit alimentaire contenant des arômes encapsulés, lesdits arômes encapsulés se présentant sous la forme d'un cœur extrudé à l'état fondu représentant de 99 à 50 % en poids de l'arôme encapsulé et d'un enrobage insoluble dans l'eau, renfermant le cœur et représentant de 50 à 1 % en poids de l'arôme encapsulé, ledit cœur comprenant, sur la base de son propre poids, de 1 à 60 % en poids d'au moins un composé de type arôme, de 99 à 40 % en poids d'un matériau de type matrice et la teneur en eau du cœur étant inférieure à 8 % en poids, toujours sur la base du poids du cœur. Le matériau de type matrice présente une température de transition vitreuse supérieure à 20 °C, la plus grande partie du matériau de type matrice est hydrophile et l'enrobage insoluble dans l'eau comprend, sur la base de son propre poids, moins de 10 % en poids d'un composé du groupe des graisses, des cires et des mélanges de celles-ci, tandis que la taille moyenne des particules d'arôme encapsulé varie de 200 à 5 000 µm.
