It has been determined that the yeast Kazachstania slooffiae, which occurs endemically in hog-gut, is capable of utilising a plurality of L-amino acids, peptone, ammonium sulfate or urea as an individual N-source and in so doing, does not use any L-lysine. The cell biomass of said yeast has a relatively high lysine content. Thus the yeast is suitable for obtaining protein-rich nutritional products and animal feed containing a high proportion of the amino acid lysine. In addition, it has been established that this yeast produces considerable amounts of ethanol and formic acid during its fermentation on all the substrates tested. Also claimed is the use of the yeast for simultaneously producing these compounds.
