By performing an extraction operation from an agar source seaweed under certain alkalinity conditions and temperature conditions, an agar was obtained that was also provided with a high rupture strength even while having a high viscoelasticity that has not been obtained in conventional agars.종래의 한천에서는 얻어지지 않던 고점탄성을 가지면서도, 높은 파단 강도를 겸비한 한천의 제조법을 제공하는 것을 과제로 한다. 한천 원조로부터, 일정한 알칼리 조건, 온도 조건하에서의 추출 조작을 실행함으로써, 종래의 한천에서는 얻어지지 않던 고점탄성을 가지면서도, 높은 파단 강도를 겸비한 한천을 얻을 수 있었다.
