The present invention relates to a manufacturing method of red ginseng which washes a raw ginseng with seawater, dips the raw ginseng in the seawater to let a mineral ingredient contained in the seawater permeate, and gradually processes steaming, fermenting, and drying. The manufacturing method of red ginseng from the raw ginseng comprises: a step of washing the raw ginseng to wash an impurity attached on the skin with the clean seawater, dipping the raw ginseng in the seawater for 12 to 24 hours, and letting the mineral ingredient, contained in the seawater, which permeates the mineral ingredient contained in the seawater into the raw ginseng, permeate into the raw ginseng; a step of steaming the raw ginseng that the mineral ingredient contained in the seawater permeates into at 94 to 100°;C steam for two to four hours, drying the ginseng, a starch ingredient of the raw ginseng is done with a gelatinization process, at room temperature with a range of 55 to 65 wt% of a moisture content, and processing the same as the ginseng that the starch ingredient of the raw ginseng is done with the gelatinization process; and a step of spreading dried rice straws or dried hay on the floor of a fermentor (fermenting chamber), placing the dried ginseng with the range of 55 to 60 wt% of a moisture content on the dried rice straws or the dried hay, spreading dried straws or dried hay again, covering a blanket or a non-woven fabric on the same, spreading dried straws or dried hay on the floor of a basket where the heat retaining fermentor or air is communicated, injecting covering the dried straws or the dried hay again by placing the dried ginseng with the range of 55 to 60 wt% of a moisture content into the heat retaining fermentor, drying the ginseng which is fermented for 16 to 30 hours while maintaining 70 to 95% of humidity as well as heating the temperature at 40 to 70°;C with the range of 8 to 14 wt% of the moisture content, and manufacturing a red ginseng product.본
