PURPOSE: A producing method of mackerel with young pine needles is provided to preventing the acidification during the storage and distribution process, and to offer the pine needle flavor when cooking the mackerel. CONSTITUTION: A producing method of mackerel with young pine needles comprises the following steps: washing 50kg of pine needles and 50kg of young pine needles with water, and crushing after removing the moisture; mixing the crushed materials with 100kg of water, micro-pulverizing the mixture before stirring, and compress-filtering using a high-pressure extractor after inserting into a hemp fabric; secondly filtering for obtaining pine needle juice; dressing frozen mackerel before washing with water, and dehydrating; spraying the pine needle juice to the mackerel; aging for 24~96hours before salting with bay salt; and freeze-storing after vacuum packing.본 발명은 유효성분 추출을 위해 유기용제를 사용하지 않고 솔잎과 솔잎순을 50:50 비율로 분쇄 하여 지하수와 50% 현탁하고 2차로 노즐 분사가 가능한 입도로 미분쇄하여 불순물을 여과하고 이를 고등어에 고루 살포하고 저온에서 숙성한 다음, 염장하여 제조하는 솔잎순 고등어의 제조방법에 관한 것이다.
