A process of producing coconut (Cocos nucifera) meatloaf is disclosed which comprises the following steps of washing and osterizing a plurality of fresh coconut meat washing and draining of ground lean pork meat and coconut meat weighing and mixing of all ingredients homogenizing of the mixture using high speed osterizer filling of meatloaf emulsion manually into a sterile tin can exhausting of filled cans for 45 minutes with an internal temperature of 78-80oC sealing of filled and exhausted cans using a double-seam cans retorting of sealed cans using an autoclave with a process time of 1.5 hour at 20 psi pressure cooling of the autoclave before opening removing of cans in the autoclave and rinsing with water wiping of cooled cans with dry cloth and storing of canned coconut meatloaf in a cool dry place.
