PURPOSE: A bean curd producing apparatus capable of preventing damage to the shape of bean curd is provided to prevent volume shrinkage of soft bean curd during a water draining process. CONSTITUTION: A bean curd producing apparatus comprises the following: a water filtering unit(220) including more than one hemispherical container with drainage perforation units； a drainage unit(210) including more than one square container with the drainage perforation units； a molding case formed with more than one cylindrical case having a sloped side surface, and more than one rectangular case with vertical side surfaces； and a perforated plate for attaching and insertion the molding case. The volume of the square containers is smaller than the volume of the hemispherical containers. The upper and lower sides of the cylindrical cases and the rectangular cases are open.본 발명은 손두부 제조용 물빼기 장치 및 이를 이용한 두부 제조 방법에 관한 것으로서, 보다 상세하게는 손두부의 물빼기 과정에서 두부의 원형이 파손되는 문제를 해결할 수 있는 새로운 물빼기 장치를 이를 이용한 손두부 제조에 관한 것이다. 본 발명에 따른 물빼기 장치는 바닥에 물빠짐용 천공부가 형성된 하나 이상의 반구형 그릇과； 바닥에 물빠짐용 천공부가 형성된 하나 이상의 사각통이 형성되고, 상기 반구형 그릇은 상기 사각통보다 부피가 더 큰 것을 특징으로 한다. 본 발명의 물빼기 장치는 두부의 물이 빠지져 모양이 잡히기 전에 초벌 물거름 과정을 도입함으로서, 물을 빼는 과정에서 격판에 의해 두부의 모양이 손상되는 것을 방지할 수 있게 된다.
