The present invention relates to a tray (B) for drying and maturing foodstuffs comprising a perforated supporting surface (82) surrounded by a perimetral frame (81), said supporting surface (82) being depressed with respect to said perimetral frame (81) and sized to receive thereon a plurality of slices (S) of a foodstuff orderly arranged in a single layer forming a matrix of separate non overlapping slices, said tray (B) being configured to be conveyed with said foodstuff slices loaded thereon across at least a foodstuff processing unit. The present invention also relates to a method and a plant for drying and maturing foodstuffs using said tray.
