PROBLEM TO BE SOLVED: To provide enzymes which can desaturate saturated fatty acids in plants, a gene coding the enzyme, and techniques for making the plants using the gene, wherein saturated fatty acids are decreased.SOLUTION: The present invention relates to a delta-9 desaturase having a certain specific amino acid sequence, a gene having a certain specific sequence encoding the delta-9 desaturase, and an expression vector, wherein the gene is connected to the expression control elements, such as a strong promoter like an LfKCS3 promoter that works in the plants. The present invention also relates to recombinant plants and their seeds, wherein the expression vector is introduced and the content of saturated fatty acids is reduced.
