By using the clotted blood which has no pores on the surface thereof and was steamed in a sticky and solid form, a food processing factory cooks the clotted blood and provides the clotted blood, which has a shape and texture of the same state as a shape and texture when the clotted blood is provided in a restaurant by keeping a solid state without breaking during a process for selling and distributing the retort-packaged solid-type clotted blood.본 발명은 선지 가공방법에 관한 것으로서, 더욱 상세히 설명하면 트레이(tray)에 선지를 담은 다음 압력 찜기에 트레이를 투입한 다음 히터에 의해 물을 가열하여 발생한 수증기를 압력에 의해 가압하여 선지 내부로 침투시기는 방식으로 선지를 익히면 선지 표면에 기공이 발생하지않고 찰지고 단단한 덩어리 형태로 익은 선지를 이용하여 식품 가공업체에서는 선지를 조리한 후 덩어리 상태의 선지를 레토르트(Retort) 포장하여 판매 및 유통하는 과정에 선지가 부서지지 않고 덩어리 상태를 유지하여 식당에서 먹는 것과 동일한 상태의 모양과 식감을 제공하는 것을 특징으로 한다.
