The present invention relates to a method for producing frozen grilled short rib patties for grilled short rib patties made with pork and beef, comprising the following steps: (a) preparing beef thawing frozen beef at a temperature of -2-0°C for 1 to 2 hours, and then cutting the same in 1-3 mm (b) preparing pork by thawing frozen pork at a temperature of -2-0°C for 1 to 2 hours, and then cutting the same in 1-3 mm (c) preparing pork flesh using pork head slices cut in 2-3 mm while the slice contains 9-28% of the pork flesh (d) primarily kneading a mixture obtained by mixing the ingredients prepared in the step (a), (b), and (c) along with corn powder-blended seasoning and (e) adding bread crumbs to the same after the primary kneading for secondary kneading without water accumulated therein, aging the same at -2-0°C for 20-26 hours after the secondary kneading, and keeping the same frozen under -18 to -20°C after aging and packaging the same.본 발명은 (a)냉동육을 -2내지 0℃에서 1-2시간 해동 후 1-3mm로 절단한 우육(b)냉동육을 -2내지 0℃에서 1-2시간 해동 후 1-3mm로 절단한 돈육에, (c)2-3mm로 절단한 돼지머리 편육을 돈육체로 하고, 이중 편육은 돈육체의 9~28중량%를 첨가한 돈육체 및(d)옥수수가루와 혼합된 양념을 상기 (a)(b)(c)에 1차 반죽하고(e)빵가루를 상기 1차 반죽 후 추가하여 물이 고이지 않도록 2차 반죽하고2차반죽 후 -2~0도에서 20~26시간 숙성하고숙성 후 포장하여 -18~-20도에서 냉동보관하는 돈우육 떡갈비용 냉동떡갈비 제조방법이다.
