PURPOSE: An apparatus for drying and maturing fruits and removing astringency of fruits is provided to maintain optimal maturing condition by controlling temperature and moisture inside a persimmon container. CONSTITUTION: An apparatus for drying and maturing fruits and removing astringency of fruits comprises: a container(2) having a door(3) at the front side and a receiving space storing persimmon inside； dehumidifier(5) for controlling moisture by temperature difference by cooling inside temperature； a heating device(22) for heating inside； a carbon dioxide generator(100) for removing astringency of fruits by inserting carbon dioxide inside the container； and a vacuum device(C) for making the inside of the container in a vacuum condition. The carbon dioxide generator comprises a Bombe(B) in which carbon dioxide is filled, a densitometer(110) in which a valve body is attached； a timer(120)； a solenoid valve(130) which is opened or closed by the timer； and a gas pipe(140) which connects the valve body and container.본 발명은 진공상태에서 이산화탄소를 주입함으로써 감의 떫은 맛을 없애는 탈삽공정을 수행하며, 탈삽 후 적정한 숙성 조건을 유지하도록 한 과일 건조,숙성 및 탈삽장치에 관한 것이다.본 발명은 전면에 개폐되는 도어(3)가 설치되고, 내부에 감을 저장하는 수용공간이 형성된 콘테이너(2)； 상기 콘테이너(2) 내에 설치되며 내부의 온도를 냉각하며 온도차에 의한 습기 형성에 의해 습도를 조절하는 제습장치(5)； 상기 콘테이너(2) 내에 설치되며 내부의 온도를 가열하는 히팅장치(22)； 상기 콘테이너(2) 내에 이산화탄소를 주입하여 감을 탈삽시키는 이산화탄소 발생장치(100)； 상기 콘테이너(2)의 내부를 진공상태로 만들기 위한 진공장치(C)를 포함한다.
