The present invention according to the present invention comprises: a main body, formed by combining multiple panels by a fastener, having a astringency removing room for removing astringency of an astringent persimmon and being in fluid communication with a high pressure carbon dioxide supply unit an opening and closing unit, installed in the front part of the main body, having a dual structure packing in the internal circumference a carbon dioxide tank, placed in the upper part of the main body, having an inlet and an outlet which are in fluid communication with the main body a vacuum pump for pumping carbon dioxide in the main body a heater installed in the main body a valve unit comprising a supply valve for controlling fluid communication by being installed between the carbon dioxide supply unit and the main unit, a first circulation valve for controlling fluid communication by being installed between the inlet of the carbon dioxide tank and the main body, and a second circulation valve for controlling fluid communication by being installed between the outlet and the main body and a control unit for controlling the operation of the vacuum pump, the heater, and the valve unit according to setting conditions such as pressure, astringency removal time, and temperature in the main body. By using the apparatus for removing astringency of persimmon according to the present invention, carbon dioxide used for removing astringency is collected in the carbon dioxide tank and the carbon dioxide is reused, thereby reducing persimmon production costs and a carbon dioxide emission amount.
