The present invention provides a coating or filling composition comprising from 5 -90 wt.% of fat, said fat consisting of a non-hydrogenated, steep -melting fat blend having the following solid fat profile: • N10 of 60-98% • N20 of 50-82% • N30 of 0-22% • N20-N30 within the range of 45 -70% and the following fatty acid composition: • 0-10 wt.% Of C4-C10 fatty acids • 30-56 wt.% of lauric acid • 9-25 wt.% of myristic acid • 7-25 wt.% of palmitic acid • 4-25 wt.% of oleic acid • 1-7 wt.% of stearic acid • 70-97 wt.% of saturated fatty acids • 0-7 polyunsaturated fatty acids. The invention also provides a process for manufacturing a steep melting fat blend as defined above.La présente invention concerne une composition denrobage ou de garnissage comprenant entre 5 et 90 % en poids de graisse, ladite graisse étant constituée dun mélange non hydrogéné de graisse fondue par trempage. Ledit mélange présente le profil de matières grasses solides suivant: 60-98% de N10, 50-82% de N20, 0-22% de N30, 45 -70% de N2O-N30 et la composition dacides gras suivante: 0-10 % en poids dacides gras C4-C10, 30-56 % en poids dacide laurique, 9-25 % en poids dacide myristique, 7-25 % en poids dacide palmitique, 4-25 % en poids dacide oléique, 1-7 % en poids dacide stéarique, 70-97 % en poids dacides gras saturés, 0-7 dacides gras poly-insaturés. Linvention concerne en outre une méthode de production dudit mélange de graisse fondue par trempage.
