The present invention relates to a method for collecting sap from trees. The method includes a collecting step and an analyzing step, wherein the purity of the liquid collected in the steps is determined and the collecting step is terminated based on the obtained information. With the use of the above method, an additive is not used, and a sap which is not heat-treated, but has excellent preservability at room temperature is produced.
