The invention provides novel microalgalfood compositions comprising microalgalbiomass that have been processed into flakes,powders and flours. The microalgal biomass ofthe invention is low in saturated fats, high inmonounsaturated triglyceride oil and can be agood source of fiber. The invention also comprisesmicroalgal biomass that is suitable as avegetarian protein source and also as a goodsource of fiber. Novel methods of formulatingfood compositions with the microalgal biomassof the invention are also disclosed herein includingbeverages, baked goods, egg products, reducedfat foods and gluten-free foods. The provisionof food compositions incorporating themicroalgal biomass of the invention to ahumanhave the further benefit of providing healthfulingredients while achieving levels of satietysufficient to reduce further caloric intake. Theinvention also provides novel strains of microalgaethat have been subject to non-transgenicmethods of mutation sufficient to reduce thecoloration of the biomass produced by the strains.Oil from the microalgal biomass can be extractedand is an edible oil that is heart-healthy. Thenovel microalgal biomass and oil therefrom canbe manufactured from edible and inedible heterotrophic fermentationfeedstocks, including corn starch, sugar cane, glycerol, anddepolymerized cellulose that are purpose-grown or byproducts of existingagricultural processes from an extremely broad diversityof geographic regions.
