PURPOSE: A method of manufacturing red pepper paste jam is provided to manufacture red pepper paste jam which contains effective components of black garlic by using black garlic extract and pulverized black garlic, and to manufacture red pepper paste jam which users on a diet are able to eat as not too much amount of sugar is used. CONSTITUTION: Black garlic in which the skin is peeled is washed and dried to obtain garlic bulbs. Black sugar 40-60wt% and garlic bulbs 40-60wt% are put into a container by turns. The mixture of black sugar and garlic bulbs is fermented in the state of the container being sealed. The fermented black garlic is separated into extract and black garlic. The separated black garlic is pulverized. The black garlic extract 20-30wt%, pulverized black garlic 30-40wt%, red pepper powder 15-20wt%, fermented soybean powder 1-5wt%, starch syrup 5-10wt% and water 10-15wt% are mixed.
