PROBLEM TO BE SOLVED: To provide a plant separate protein hardly generating flour, excellent in dispersibility into water and easily capable of being dissolved quickly even under a moderate agitation condition such as for dispersing a powder beverage into water by a consumer at home.SOLUTION: There is provided a method for manufacturing plant separate protein having NSI of 20 or more and less than 90 including following a) to c) processes. a) a process of preparing a protein-containing solution from a plant raw material and reacting phytic acid catabolic enzyme with it and partially hydrolyzing phytic acid to obtain an enzyme reaction liquid, b) a process of high temperature heating treatment of the enzyme reaction liquid through the process at pH 5.5 or more and less than 7 to obtain high temperature heating liquid and c) a process of dry powdering the high temperature treatment liquid.COPYRIGHT: (C)2015,JPO&INPIT【課題】粉末飲料を消費者が家庭で水に分散させるときのような緩やかな攪拌条件であっても、ママコが生じにくく、水への分散性に優れ、容易に素早く溶解させることができる植物性分離蛋白を提供する。【解決手段】下記a)~c)の工程を経ることを特徴とする、NSIが20以上90未満の植物性分離蛋白の製造法、a)植物性原料から蛋白質含有液を調製し、これにフィチン酸分解酵素を作用させてフィチン酸を部分加水分解し、酵素反応液を得る工程、b)前記工程を経た酵素反応液をpH5.5以上7未満において高温加熱処理し、高温加熱処理液を得る工程、c)前記高温加熱処理液を乾燥粉末化する工程。【選択図】なし
