The present invention relates to functional rice and a production method of the rice, more specifically functional rice for users to enhance nutrients including minerals, vitamins, etc. for eating which is obtained by the followings: selecting an impregnation material formed of a medical component, an edible component, or a fragrant component, and dissolving the impregnation material in water or an edible solvent； spraying the impregnation material to rice after inserting the rice into a pressure tank； and impregnating the impregnation material into tissues of the rice using the pressure difference generated from a pressure cycle which ascends and descends by the supply and discharge of compressed air into the pressure tank.본 발명은 기능성 쌀 및 그 제조방법에 관한 것으로서, 더욱 상세하게는 우리나라의 주식인 쌀에 부족한 미네랄, 비타민 등의 부족한 영양분을 강화하여 먹을 수 있도록 약용성분, 식용성분, 향기성분 등으로 이루어진 침투물질을 선택하여 물이나 식용용매에 용해한 후, 압력 탱크 내부에 쌀을 넣고 침투물질을 스프레이로 분무한 후, 압력 탱크 내부로 압축공기를 공급 및 배출에 의해 상승 및 하강을 반복하는 압력사이클 통한 압력 차이 방식으로 침투물질을 쌀의 조직 내부로 침투시켜 기능성 성분이 다량 함유된 기능성 쌀을 특징으로 한다.
