[Problem] To produce a pea polysaccharide which exhibits a protein dispersion stabilizing ability in a wide pH range by a simple method. [Solution] A water-soluble pea polysaccharide having an excellent protein dispersion stabilizing ability can be produced by a simple method in which a pea fiber material is used as a raw material and the pea fiber material is extracted, wherein the particle diameters of 80% or more of the pea fiber material are distributed over a range from 100 µm to 1000 µm inclusive.
