The present invention discloses an apparatus for expediting the mature of fermented food by using ultrasonic and nanogold-bamboo carbon composite material, which comprises a tank body, an ultrasonic oscillator unit, a temperature control module and a mature module. The tank body is used for accommodating the fermented food, and there is an opening at one end of the tank body. A cover body is disposed for covering the opening. The ultrasonic oscillator unit is disposed at one side of the outside of the tank body, and emits an ultrasonic to the fermented food. The temperature control module is connected with the tank body for controlling a temperature of the fermented food. The mature module is disposed within the tank body comprising a nanogold-bamboo carbon composite material in form of powder. The composite material contacts with the fermented food to catalyze the mature of the fermented food.
