The present invention relates to a method for producing alkaline chitosan having low endotoxin, a method for producing neutral chitosan, chitosan salts and chitosan derivatives of low endotoxin, and products obtained by these methods. The method includes contacting chitosan with an alkaline solution to form a mixture and allowing the mixture to stand for at least about 12 hours. Low endotoxin alkaline chitosan can be used to produce other useful chitosan-based products.
