To provide a seasoning liquid for impregnation into which food raw materials are impregnated before heat cooking when fried food is cooked by using the food raw materials such as meat, adhering to raw materials easily in short time without impregnation for long time or rolling when the raw materials are impregnated, good in impregnation of taste, and having batter with crispy texture after heat cooking, and food raw materials impregnated into the seasoning liquid for impregnation.SOLUTION: By containing a fruit fiber such as a citrus fiber or an apple fiber of 0.03 to 2.0% (w/w) into a seasoning liquid for impregnation for impregnating food raw materials, and the food raw materials are impregnated by using the seasoning liquid for impregnation having viscosity adjusted to 200 cp to 1500 cp.SELECTED DRAWING: None【課題】肉類等の食品素材を用いてから揚げを調理する際に、食品素材を加熱調理前に漬け込む調味液であって、素材を漬け込む際に長時間の漬け込みやもみ込みをすることなく簡便・短時間で素材に付着し、味の染み込みがよく、また、加熱調理後は、衣がサクサクとした食感となる漬け込み用調味液、おより該漬込み用調味液で漬け込んだ食品素材を提供する。【解決手段】食品素材を漬け込むための漬け込み用調味液に、シトラスファイバーやアップルファイバー等の果実ファイバーを0.03~2.0%(w/w)含有させ、好ましくは粘度が200cp~1500cpに調整した漬け込み用調味液を用いて、食品素材を漬け込む。【選択図】なし
