The present invention relates to a method for processing ginseng (Panax ginseng) fruits to increase the amount of ginsenoside components. The method includes a washing process (S1) for removing residual pesticides and impurities on ginseng fruits, a dewatering process (S2), a drying process (S3), a hot-steaming process (S4), a saccharification fermentation process (S5), and a roasting and puffing process (S6). The hot-steaming process (S4) is executed for the length of time selected within a range of 24 to 120 hours at 72°C to 76°C without supplying steam while the roasting and puffing process (S6) is executed with an inert gas injected therein for suppressing the generation of benzopyrene.
