The process for making the candy using the defatted buttermilk comprising the steps of : Filtering of the defatted buttermilk in a liquid sieve of 30 gauge mesh mixing together the said defatted buttermilk of step (i), sugar and edible soda bi-carb in the kittle with constant stirring to make the mixture cooking the said mixture of step (ii) on low heat, while continuously stirring the mixture till above said mixture reaches to a boiling point continue cooking over medium heat, stirring constantly and allowing the mixture to reach a "Soft ball stage". Approx (118-120 deg) disconnecting the heat once it reaches the soft ball stage and adding any flavour of choice continue Stirring until the mixture begins to thicken till a brown color is observed and gets darker pour the said mixture of step (vi) in moulds of desired shape for cooiing and settling demoulding the formed candies and wrapping it immediately.
