The present invention relates to a fermented rice bran extract with enhanced functional and physical properties, and a preparing method thereof. The preparing method according to the present invention comprises the steps of: (a) pretreating rice bran； (b) hydrolyzing the pre-treated rice bran obtained in step (a) to an enzyme agent； (c) fermenting the hydrolyzed rice bran obtained in step (b) with mushrooms； (d) adding one selected from water, a liquor, or a mixture thereof to the fermented rice bran obtained in step (c), and extracting the same； and (e) filtering and concentrating an extract obtained in step (d). The fermented rice bran extract is prepared by the preparing method of the present invention, which comprises the steps of: pretreating rice bran； hydrolyzing the rice bran with an enzyme agent； and fermenting the rice bran with mushrooms. Thus, active ingredients are extracted from rice bran, and digestion and absorption can be easily performed. Also, antioxidant activities can be exhibited, and comprehend palatability including colors (gloss), flavors, tastes, and textures can be remarkably improved.
