PURPOSE: A new ginseng processing method is provided to increase the content of specific ginsenoside which is only discovered in ginseng not in undried ginseng and ginseng. CONSTITUTION: Process ginseng with condensed hot water under the condition of 100-374 deg. C and 10-220 bar. The treatment is processed in 120-240 deg. C condition. A processed ginseng extract increased content of ginsenoside that the conversion rate of &lsqb；(Rg3+Rh2) /(Rb1+Rb2+Rc+Rd)&rsqb； to Rg3 of ginsenoside Rb1, rb2, rc, rd and Rh2 is 3 or greater. Ginseng processing is performed under the condition of non air existence. Hot water is hot water which removed dissolved oxygen which is contained in water. [Reference numerals] (AA) Ginsenoside naturally existing in ginseng본 발명은 100~374 ℃ 및 10~220 bar 조건 하, 압축된 열수로 인삼을 처리하여 인삼의 진세노사이드 함량을 증진시키는 것에 대한 것이다. 본 발명에 의하여 특히 인삼 내 진세노사이드 Rg3 및 Rh2의 함량이 크게 증진되게 된다.
