Process for packaging a fluid food product (1 ), such as a beverage or a soup, containing solid pieces (3), comprising the steps of: boiling under high pressure a first fluid mixture (2) formed from said solid pieces (3) and a first fluid (4) lowering the temperature of the first fluid mixture (2) evacuating a part of the steam predisposing a UHT treatment of a second fluid (5) and then cooling the second fluid (5) to a temperature lower than 60°C once the second fluid (5) has cooled, introducing a pre-established quantity thereof into the first fluid mixture (2) so as to obtain said fluid food product (1) introducing a pre-established quantity of said fluid food product (1) into a PET container (15).Linvention concerne un procédé de conditionnement dun produit alimentaire fluide (1), tel quune boisson ou une soupe, contenant des morceaux solides (3), comprenant les étapes consistant : à bouillir sous haute pression un premier mélange de fluide (2) formé à partir desdits morceaux solides (3) et un premier fluide (4) à abaisser la température du premier mélange de fluide (2) évacuant une partie de la vapeur à prédisposer un traitement UHT dun second fluide (5) puis refroidir le second fluide (5) à une température inférieure à 60 °C une fois que le second fluide (5) a refroidi, à introduire une quantité préétablie de ce dernier dans le premier mélange de fluide (2) de manière à obtenir ledit produit alimentaire fluide (1) et à introduire une quantité préétablie dudit produit alimentaire fluide (1) dans un contenant en PET (15).
