PROBLEM TO BE SOLVED: To provide a highly versatile modification system for improving the functions of ingredients (such as polyphenol) in a raw material or a processed product of a plant (vegetable)/fruit, with a simple operation, with addition of nothing, within a short time and effectively, and especially, making instant response to fresh vegetable/fruit and the like (daily and general use soon before or in eating and drinking at a place for eating) easy.SOLUTION: The system is configured to utilize a rotation device oscillating both the loads of rotation centrifugation and a magnetic field, and to facilitate depolymerization of polymers having functional ingredients (such as polyphenol) in objective materials (raw materials and processed products of plant (vegetable)/fruit and the like) to low molecular weight polyphenols for their functionality improvement.COPYRIGHT: (C)2013,JPO&INPIT【課題】簡便な操作で無添加にして短時間かつ有効的に、植物(野菜)・果物の原材料または加工製品中の成分(ポリフェノール等)の機能性の向上に働きかけ、特には生鮮野菜・果物などへの即時の対応(日常の、食事に供する場所にての飲食直前または飲食中での一般的使用)を容易とさせる汎用性の高い改質方法を提供する。【解決手段】自転回転遠心と、磁場との双負荷を発振する回転装置を応用し、対象材料(植物(野菜)・果物などの原材料または加工製品)中の機能性成分の重合体(ポリフェノール等)への解重合に働きかけることで低分子化ポリフェノールへ改質させ、機能性の向上を図らせる構成とされている。【選択図】図1
