PROBLEM TO BE SOLVED: To provide a manufacturing method of a rice bran malt having good aroma and flavor useful for food material, achieving effective utilization of rice bran as food material and a manufacturing method of a saccharified rice bran malt and a saccharified rice bran malt-grain flour using the same.SOLUTION: The manufacturing method of a rice bran malt includes: (1) forming rice bran flour defatted by low temperature squeezing into a predetermined shape with adjustment of water content, so as to be heated for shape retention and sterilization (2) adding at least one Aspergillus selected from the group consisting of Aspergillus kawachii and natural mutant, artificial mutant, and gene manipulated mutant thereof is added with water to the produced molding of defatted rice bran for cultivation. Further, the produced rice bran malt is saccharified to produce a saccharified rice bran malt, or gelatinized grain flour is added to the produced rice bran malt and then the mixture is saccharified to produce a saccharified rice bran malt-grain flour.
