Disclosed is a process for producing a natural re-hydrating and energizing bottled coconut water beverage wherein coconuts are harvested by slowly dropping down the fruits from the top of the tree using a string. The coconuts are de-husked within the day after harvest into a mechanical or manual de-husker. Proper handling and transporting of dehusked coconut is ensure to avoid too much shaking to prevent the soft portion at the surface of the meat from mixing into the water of said coconuts. Pre-cleaning said coconut by removing excess husks and fibers using scalpel. Washing, sanitizing, and rinsing the pre-cleaned coconuts into washing tanks using tap water, chlorinated water concentrate and rinse with distilled or potable water. Transferring the rinsed coconut into a drying cage and allow it to drain and air-dry at room temperature. Extracting the coconut water of said coconuts to an extractor machine and allows the coconut water to flow by gravity into a temporary holding tank disposed underneath said extractor and conveyed into a pre-pasteurization holding tank through a suction pump. Pasteurizing, pre-cooling, and chilling the coconut water and filling said pasteurized coconut water into sanitized bottles and sealed with caps and finished products are stored in a chiller.
