The present invention provides a puffed dried rice, which has a bulk density of 0.2-0.55g/mL and a porosity of 45-90%. A proper preparing method of the puffed dried rice of the present invention includes performing a first drying of the rice adding a liquid modification agent and blending and mixing for allowing the surface of the rice to be applied with the liquid modification agent then performing a second drying and finally performing puffing and drying by hot air, after cooling an instant rice with a bulk density of 0.2-0.6g/mL is thus obtained.一種膨發乾燥米飯,其具有0.2-0.55g/mL的假密度及45~90%的孔隙率。本發明的膨發乾燥米飯的一合適製備方法包括對米飯進行第一次乾燥,加入一液態改質劑攪拌混合使得米飯表面被塗佈有液態改質劑,再進行第二次乾燥,最後以熱風進行膨發乾燥,於冷卻後即得假密度(bulk density)0.2-0.6g/mL的速食米飯。
