The invention describes a process for modifying the development of aromatic compounds vanilla pods, which includes placing the vanilla pods in a horizontal or vertical positions in a water bath, jacketing and coupling the same to a recirculator to keep the temperature constant, and subjecting the pods to sonication by the following cycles which are repeated twice: at 70°C for 1, 3 and 5 min, and at 80°C for 1 min., at a fixed frequency of 24 KHz and a theoretical maximum power of 400W, corresponding to an amplitude of 100%.La presente invención describe un proceso para modificar el desarrollo de compuestos aromáticos en vaina de vainilla, el cual incluye colocar las vainas de vainilla en posiciones vertical u horizontal en un baño de agua, enchaquetado y acoplado a un recirculador para mantener la temperatura constante, y someter las vainas a sonicación mediante los siguientes ciclo por duplicado, 70°C por 1, 3 y 5 min y a 80°C por 1 min, a una frecuencia fija de 24 KHz y una potencia máxima teórica de 400W, correspondiente a una amplitud de 100%.
