PROBLEM TO BE SOLVED: To provide an apparatus for removing the core of a vegetable by which a beautiful cut face is provided while causing little waste of the vegetable and preventing the waste of the vegetable from entering the spaces of leaves to improve the quality of the removal of the core part, and which can be produced inexpensively.SOLUTION: The apparatus for removing the core of the vegetable includes a vegetable-carrying means 20 for carrying a cabbage W, a vegetable-holding means 30 for holding the cabbage W by pushing the cabbage W put on the vegetable-carrying means 20 onto the vegetable-carrying means 20, a core-removing blade means 50 arranged at the lower side of the vegetable-carrying means 20 and having a core-removing blade 51 for removing the core part of the cabbage W, a holding and driving means 40 for driving the vegetable-carrying means 20 and the vegetable-holding means 30 so as to hold the cabbage W, and an upward and downward driving means for carrying out the core removal of the cabbage W by relatively moving the vegetable-carrying means 20 and the vegetable-holding means 30, and the core-removing blade 51 upward and downward.
