A dough pressing system (100) including means for coupling a cover to apressing platen (110),wherein the cover can reduce the wear caused to the pressing platen (110) bythe heat andpressure used to process one or more products. The cover optionally can beconfigured to beremovably attached to the pressing platen (110) with vacuum pressure. One ormore spacers(310a-f) are placed between the cover and the pressing platen (110). Thethickness of thespacers (310a- f) can adjust the thickness and diameter of products processedby the pressingplaten (110). For example, to increase uniformity among products pressedtogether in a presscycle, the spacers (310a- f) can have different thicknesses that correspondwith the location ofthe spacer in the pattern of dough balls (104).
