There is provided a harvesting method which suppresses generation of damage and harvests a target. The harvesting method is a method which is used in a harvesting device (100) including a pulling-in mechanism (1, 2) that pulls in one of a plurality of targets (50) grown on a plant, and a harvesting mechanism (8, 9) that harvests the pulled-in target. The method includes: a process of pulling in the target (50) in the direction in which the pulling-in mechanism (1, 2) is separated from the plant； a process of inserting the harvesting mechanism (8, 9) to a lower part of the pulled-in target (50) while vibrating the harvesting mechanism； and a process of cutting the target from the plant by the inserted harvesting mechanism (8, 9).
