A process for the manufacture of a soluble beverage powder, the process comprises forming a mass 11 comprising a beverage concentrate, such as a block or form-retaining body of beverage concentrate. A portion of the surface of the mass is coated with a substantially dry edible powder 12,13. At least a portion of a surface of the mass then is contacted with a water permeable membrane 15, 16, whereby water passes from the mass through the permeable membrane to at least partially dry the mass. Finally, the partially dried mass is texturised to form the soluble beverage powder. The resulting beverage powder retains volatile flavours or aromas which may be lost during conventional drying processes. The beverage powder may be a coffee powder, a milk powder, a tea powder, a juice powder, a cocoa powder or a chocolate powder.
