Described herein is a method of manufacturing a soluble flour comprising preparing a flour-water slurry, adjusting the pH of the slurry to a pH ranging from 3.5-6, adding an enzyme to the pH adjusted slurry in an amount ranging from 0.02-2.0 g enzyme/g flour to form a reaction mixture, cooking the reaction mixture at a temperature ranging from 60-140C until a dextrose equivalent of 5 to 18 is achieved, inactivating enzyme to obtain a soluble flour; and adjusting pH of the soluble flour to range from 4-5. The soluble flour obtained has a dextrose equivalent value ranging from 5 to 18, a solubility greater than 50% (at 5% solids), and a viscosity between 0.001 and 1.0 Pa* at temparetarues ranging from 20-50C (at 10% solids).La présente invention concerne un procédé de fabrication d'une farine soluble, comprenant la préparation d'une bouillie de farine-eau, l'ajustement du pH de la bouillie à un pH allant de 3,5 à 6, l'ajout d'une enzyme à la bouillie dont le pH a été ajusté, en une quantité allant de 0,02 à 2,0 g d'enzyme/g de farine pour former un mélange réactionnel, la cuisson du mélange réactionnel à une température allant de 60 à 140 °C jusqu'à ce qu'un équivalent en dextrose de 5 à 18 soit atteint, l'inactivation de l'enzyme pour obtenir une farine soluble; et l'ajustement du pH de la farine soluble dans la plage de 4 à 5. La farine soluble obtenue a une valeur d'équivalent en dextrose allant de 5 à 18, une solubilité supérieure à 50 % (à 5 % de matières solides) et une viscosité comprise entre 0,001 et 1,0 Pa*s à des températures allant de 20 à 50 °C (à 10 % de matières solides).
