The method for preparing cookies of the present invention is provided, wherein cereal grains are expanded through high temperature and high pressure and extruded into a belt-shaped raw material, then the belt-shaped semi-finished product is cut into a plurality of cookie pieces, lastly, the cookie pieces are dried and the shape is fixed. The method of the present invention not only avoids the cost of grinding the cereal grains into flour, but also avoids the time and cost of preparing the dough, substantially conserves the processes, time, and energy for baking. In addition, the material for use can be a whole grain which still contains germ and bran layer (or bran), such that the finished cookies can contain original nutritional value of the grain.本發明之餅乾製造方法,係將穀物之穀粒透過高溫、高壓方式將其膨化並且擠製成帶狀原料之後,再將帶狀半成品裁切出複數餅片,最後將餅片烘乾定型,不但可以省去將穀粒研磨成穀粉之成本,以及省去製糰的時間及成本,更可大幅節省烘焙的工序、工時及能源;尤其,所使用的原料係可為仍然保有胚芽、糠層(或麩皮)的全穀穀粒,使所製作完成的餅乾更能夠保留穀物原有的營養價值。
