PROBLEM TO BE SOLVED: To provide an agent for suppressing the degradation smell of citral which is a main flavor component of citrus flavor and provide a citrus flavor having suppressed degradation smell.
SOLUTION: The quality of a citrus flavor can be maintained over a long period by using an agent for suppressing the degradation smell of citral containing one or more components selected from the extracts of Eucommia ulmoides, Isodon japonicus, Hibiscus sabdariffa, Beta vulgaris, Litchi chinensis seed, Olea europaea leaf, Onagaraceae biennis seed, Tabebuia avellanedae, Psidium guajava, Calendula officinalis, Nigella sativa, Silybum marianum, Cynara scolymus, Euphrasia officinalis, Echinacea purpurea, Echinacea angustifolia and Echinacea pallida.
