PROBLEM TO BE SOLVED: To provide an oil and fat composition which contains diacylglycerol and wherein crystal deposition is suppressed, even at low temperatures.SOLUTION: A polyglycerine fatty acid ester wherein the mean degree of polymerization of the glycerine is &ge20 exhibits excellent inhibiting effect on diacylglycerol crystallization and improves low-temperature resistance. The oil and fat composition contains &ge20 mass% of components (A) and (B), with (A) being a polyglycerine fatty acid ester wherein the mean degree of polymerization of the glycerine is &ge20, and (B) being diacylglycerol. The content of an unsaturated fatty acid in fatty acids constituting the diacylglycerol is preferably 80-100% from the point of view of appearance and physiological effect.COPYRIGHT: (C)2012,JPO&INPIT【課題】低温下においても、結晶の析出が抑制されたジアシルグリセロール含有油脂組成物を提供する。【解決手段】グリセリンの平均重合度が20以上のポリグリセリン脂肪酸エステルが、ジアシルグリセロールに対して優れた結晶抑制効果を発揮し、低温耐性を向上させる。すなわち、次の成分(A)及び(B):(A)グリセリンの平均重合度が20以上であるポリグリセリン脂肪酸エステル、(B)ジアシルグリセロール20質量%以上、を含有する油脂組成物による。ジアシルグリセロールを構成する脂肪酸中の不飽和脂肪酸の含有量は、80~100%であることが外観、生理効果の点から好ましい。【選択図】なし
