PROBLEM TO BE SOLVED: To provide a method for producing noodles for heating with a microwave oven, improved in physical properties and palatability, and an enzyme preparation for modifying the noodles for heating with the microwave oven.SOLUTION: A method for producing noodles for heating with a microwave oven is provided by adding a polyglutamic acid or a polyglutamic acid salt, and a transglutaminase and/or a glucose oxidase to a raw material grain flour.
